Journey to four different microclimates in a glass.
Removed from mainland climates, islands around the world produce wines that show maritime conditions, ocean influence, differing soil times.
We will taste through a flight of wines from Sicily, Santorini, Waiheke and Tasmania to explore how isolation and the ocean can influence what's in our glass.
Joe Costello is the Restaurant Manager and Beverage Director of leading Auckland restaurant, Paris Butter.
Joe’s journey has taken him from a Michelin-recognised restaurant in Ireland to hatted establishments in Sydney and Auckland. Joe's passion lies in creating memorable dining experiences that connect food, wine and people.
